Preheat your oven to 200C/Fan 190C/Gas Mark 5. Line a baking sheet with baking paper, and add sliced lemons to form a bed. Place the sea bream skin side down on top of the lemons. The flavours from the herbs and lemons will infuse the fish without drying out or getting stuck to the baking sheet.
Lightly drizzle olive oil on top and scatter the herbs. Place in the oven and cook for 12 minutes, or until cooked through.
Remove the excess herbs and serve with new potatoes and green vegetables.
