In a large bowl, combine soy sauce, honey, sriracha, olive oil, apple cider vinegar, minced garlic, smoked paprika, ground cumin, chilli powder, ground ginger, black pepper, and salt. Mix thoroughly to combine.
Add the cubed BBQ meat to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 2 hours, or overnight for maximum flavour.
Preheat your BBQ grill to medium-high heat. Thread the marinated meat onto the skewers, alternating with red and green bell peppers, pineapple chunks, red onion, and courgette slices for a mix of sweet, spicy, and savoury flavours. Brush any remaining marinade over the assembled kebabs.
Place the kebabs on the preheated grill. Grill for 12-15 minutes, turning every few minutes to ensure even cooking and a nice char on the outside.
Check that the meat is cooked through and the vegetables are tender but still crisp.
Remove the kebabs from the grill and let them rest for a few minutes. Serve hot with sides like couscous, a fresh cucumber salad, or grilled corn on the cob.
