BBQ Chicken Wings Recipe with Homemade BBQ Marinade

  • 1.5 kg chicken wings
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper

Homemade BBQ Marinade:

  • 240 ml ketchup
  • 60 ml apple cider vinegar
  • 60 ml honey
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper

Method

  • Step 1 : Prepare the Chicken Wings

    Rinse the chicken wings under cold water and pat them dry with kitchen paper. Place the wings in a large bowl (you could even use chicken drumsticks too).

  • Step 2 : Season the Wings

    In a small bowl, mix the salt, black pepper, garlic powder, paprika, and cayenne pepper (if using).Sprinkle the seasoning mix over the wings and toss until all wings are evenly coated.

  • Step 3 : Make the Homemade BBQ Marinade

    In a medium bowl, combine the ketchup, apple cider vinegar, honey, Worcestershire sauce, brown sugar, Dijon mustard, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well until all ingredients are fully incorporated and form a delicious paste.

  • Step 4 : Marinate the Wings

    Reserve 120 ml of the BBQ marinade for basting later. Pour the remaining marinade over the chicken wings, ensuring they are well coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for the best flavour.

  • Step 5 : Preheat the BBQ

    Preheat your BBQ to a medium-high heat, around 190-200°C.

  • Step 6 : Cook the Wings:

    Remove the wings from the marinade and let any excess drip off. Place the wings on the BBQ grill, making sure they are spread out evenly and not touching each other. Grill the wings for 20-25 minutes, turning occasionally to ensure they cook evenly. The wings should be golden brown and have an internal temperature of at least 75°C.

  • Step 7 : Baste with Reserved BBQ Sauce

    Once the wings are almost done, brush them generously with the reserved BBQ sauce on all sides. Continue to grill for an additional 5-7 minutes, turning and basting with more BBQ sauce as needed. This will caramelise the sauce and give the wings a nice sticky coating.

  • Step 8 : Serve

    Remove the wings from the BBQ and let them rest for a few minutes. Serve hot with extra BBQ sauce on the side for dipping. We also recommend serving with a delicious summer salad and chips for the perfect BBQ pairing.

  • Step 9 : Top Tips

    For an extra smoky flavour, consider adding some soaked wood chips to your BBQ.

    If you prefer your wings crispy, place them under a hot grill (broiler) for a few minutes after saucing.
